Our Story

Popover Eatery began in the summer of 2014 with a simple dream: to bring something fresh, inclusive, and joyful to our community. What started as a passion project between two friends quickly became a local favorite — a vibrant, welcoming space where people can gather, eat well, and feel right at home.

We created Popover because we saw a need for a dining experience that could be healthy and fun — where dietary restrictions aren't limitations but invitations to get creative. With a focus on high-quality, often local and organic ingredients, we serve up delicious dishes for every kind of eater, with plenty of gluten-free, vegetarian, and vegan options. And yes, you have to try the baked goods and the signature drinks — brunch isn't complete without a little sparkle.

At the heart of Popover is love — for food, for our community, and for the coastal lifestyle that inspires us every day.

Meet the Women Behind the Pop

Pamela – The Coastal Firecracker

Pamela is the bold, creative energy behind Popover. A lover of brunch, people, and playful details (hello, punny cocktail menus), she brings the spark that lights up both locations. With a background in hospitality and an eye for unforgettable dining experiences, Pamela is the spice in the Popover recipe — curating menus, throwing incredible events, and making magic happen seven days a week. When she's not leading the charge at the Mystic location, you'll find her paddle boarding, exploring new restaurants, or spending time with her dog and daughters. She moved to the coast to live her dream — and brought a whole lot of deliciousness with her.

Sara – The Soulful Balance

Sara is the calm, kind soul at the heart of our Simsbury location. A graduate of the Institute for Integrative Nutrition and lifelong vegetarian, she brings a wellness-forward approach to everything she does — from crafting menus to creating a space that feels like a hug. Sara is health-conscious without being preachy, endlessly sweet, and always glowing (we're convinced she drinks from the fountain of youth). When she's not managing Simsbury with grace, she's in her garden, showing homes, or chasing sunshine at the beach. Sara is the yin to Pamela's yang — together, they've made Popover more than a restaurant. It's a vibe.
